“Dong Dang”

Inspired by a traditional noodle-making technique from Udon Thani, Dong Dang is Baan Tepa’s take on rice noodles. Over time, the dish has taken on many forms, featuring ingredients like ricotta miso, black squid ink, and salted duck egg. Each version reflects our ongoing exploration of Thai regions, native ingredients, and culinary storytelling.

“Crab Crab Crab”

Showcasing the diversity of Thai crab varieties—from saltwater species along the southern coast to freshwater crabs found in rice paddies and inland streams—this dish brings together Blue Swimmer Crab from Surat Thani, Rice Field Crab Coral from Lamphun, Black Crab Miso from Sakon Nakhon, and Soft Shell Crab Garum made from last season’s catch in Trang. A tribute to the rich biodiversity of Thailand’s waters and the evolving flavors shaped by each region.
